Today is National Chocolate Cake Day.
We eagerly anticipate the return of this “holiday” year after year because, well, we love chocolate cake!
Celebrating Chocolate Cake… but… which one?
It was tough to pick just one chocolate cake in the Jackson, MS metro area to feature on this special holiday, but there is one that, to us, stands out amongst all the other chocolate cakes that we’ve tried. This cake comes from Mint the Restaurant in Ridgeland, and it’s called Hot Chocolate Pudding Cake.
Mint’s Hot Chocolate Pudding Cake
This Hot Chocolate Pudding Cake is beautifully plated with a perfect scoop of ice cream and a salted caramel and pecan drizzle around the edge. The rich, moist chocolate cake, when eaten by itself, is worth slappin’ your sister for a bite. The exterior of this individually baked cake has the most glorious fudgy, pudding-esque layer, which seals all the magnanimous flavors into the cake. But when your bite has cake AND caramel pecan drizzle AND ice cream…. Well, then, you may as well just slap every single member of your family. Or maybe kiss them. It’s THAT good.
